Obama wins... and I make muffins


Wow! What a day in politics.

I decided to celebrate this moment in political history by doing some baking. How exciting am I! Plus, I was bored and the rain was messing with our TV reception.

I decided these would be my aptly named Obama Banana Chocolate Chip Muffins. They are actually just called Chocolate Banana Muffins, from an Alison Holst book but that's just plain boring.

If you have a few bananas in your kitchen that are beyond lunchbox quality why don't you give it a go.

2 cups SR flour (or I used 2 cups of plain + 2 tsp baking powder)
1/2 cup caster sugar
1/2 chocolate chips (you could use more if you are nuts about chocolate)
1/2 tsp salt
100g butter
1 cup milk
1 egg
1 tsp vanilla essence
1 cup of mashed bananas

1 - In a large bowl, stir together the flour, caster sugar, chocolate chips and salt.
2 - In another bowl, melt the butter, then add milk, egg and vanilla. Beat well.
3 - Mash bananas and stir into liquid mixture, mixing well to combine. Tip into bowl with dry mixture.
4 - Fold everything together carefully until flour is dampened. Don't over mix.
5 - Spray muffin pans with non stick spray. Spoon mixture into pan.
6 - Bake at 220 c for 12-15 minutes, until muffins spring back when pressed in the centre.
7 - Enjoy! And try not to eat the whole lot in one go. Very tempting...
